ingredients
- 1 lb chicken breast, cooked, chopped
- 1⁄4 cup mayonnaise
- 2 tablespoons Tabasco jalapeno sauce
- 3 tablespoons lime juice
- 3 celery ribs, chopped
- 1 green pepper, chopped
- 1 avocado, chopped
- 1 green apple, chopped
- 1 cup green grape
- 1 tablespoon parsley, minced
- 16 ounces lettuce, shredded
directions
- mix all but lettuce
- put lettuce on plate
- top with chicken salad.

Dienia, thanks so much for posting this lovely chicken salad recipe ! Dh was very skeptical when he saw me cutting up apples and grapes, he was soon convinced. We both loved it and are looking forward to many lunches made with it. From the salad itself, to wraps (tortilla for dh and lettuce wraps for me), to sandwiches and anything else we can think of to put it with. Love the crunch of the apple and the sweet of the grapes.
