  • 2 cups chicken, cooked and cubed
  • 1 cup celery
  • 1 cup rice, cooked
  • 34 cup mayonnaise
  • 1 (7 ounce) can mushrooms, sliced
  • 1 tablespoon onion, chopped
  • 1 teaspoon lemon juice
  • 1 teaspoon salt
  • 1 (10 1/2 ounce) can cream of chicken soup
  • 1 (10 1/2 ounce) can cream of celery soup
  • TOPPING

  • 14 cup butter, melted
  • crushed potato chips

directions

  • Preheat oven to 350 degrees.
  • Mix all ingredients except topping. Place in 2 quart casserole dish.
  • Mix topping and spread over top.
  • Bake 35 minutes or until bubbly.

  1. This is very yummy. I followed the recipe as written but I will make a few changes based on my personal taste. This dish is a little too salty so next time I will add a small jar of chopped pimentos to mix things up a bit or maybe even green chilis. I will definately omit the chips topping, the dish is wonderful without it plus who needs the extra fat, Right? Thanks for posting, I will make a again for sure!

We are recent transplants from Iowa to NC. I have 4 and 1 1/2 year old boys. I am a stay-at-home Mom. My husband is originally from Australia so I make a lot of Australian dishes. I love to read in my spare time and do cross stitch. I am also trying to teach myself how to play the electronic keyboard. I also do espionage work for the government in my spare time. Just kidding, but my bio sounded so boring I had to add something exciting. My days are rather full of food fights and scraped knees. I love to put a home-cooked meal on the table every night for my family, even if I do hear I'm not going to eat that! November 2008..As the old saying goes, time flies. I thought it time to update the info here. We have now been in NC for 3 1/2 years and have added another boy to our crew. Yes, that makes 3 crazy boys! Their ages are 7,4, and 18 months. I can entice the oldest to try most anything. Our 4-year-old would live on PBJ, and mac & cheese if I let him. The youngest will eat any veggie put in front of him, so far! I'm sure his brothers will set him straight. Oh, I forgto to mention that we homeschool, so easy to recipes that don't take long to put together are high on my list now.
