Emily's Cheesy Corn Casserole

ingredients
- 1 (8 1/2 ounce) box cornbread mix (Jiffy)
- 1 (8 1/2 ounce) can of sweet creamed corn
- 1 (8 1/2 ounce) can sweet whole kernel corn, drained
- 2 eggs
- 1 cup sour cream
- 1⁄2 cup butter, melted
- 1 cup cheddar cheese
directions
- Mix all ingredients and blend well.
- Pour into a greased 2 1/2 quart casserole baking dish.
- Bake at 350 degrees for 45 to 50 minutes or until light brown on top.
- Note: 1/2 cup of shredded cheddar cheese may be sprinkled on top during last 10 minutes of baking (optional).

I made a lower fat version of this and it still turned out great: I used fat free sour cream, 2% fat cheddar cheese, and I cut the butter down to 1/4 cup and added 3 TBSP olive oil to make up for the reduced butter. It still tasted rich, so I might dare to substitute more butter with olive oil next time for a healthier dish.

<p>Thanks for taking the time to stop by My Page! I am married to a quiet, but fun loving guy who cleans up the kitchen!! I have grandchildren who I adore.
