  • Spray an oven save dish with cooking spray, choose a dish just slightly larger than your tortilla.
  • Place one tortilla in the bottom, top with beans, meat rice onion and cheese, repeat layers until about 1/2 to 3/4 inch from top and pour sauce over, top with a tad bit more cheese and a few onions.
  • Bake for 30-45 minutes in a 350 oven.

  1. I was looking for a quick dinner idea to use up some left over chicken and this dish was perfect. I followed the recipe exactly except I used green onions. What a wonderfully flavored dish that will be a frequent meal from now on. Served with a toss salad and our meal was complete....so easy!!!

  4. This is a family favorite. I have made this with leftover turkey, chicken and pork. I have also used canned chicken and ground beef, all with excellent results.
     
  5. I couldn't stop eating this. But I did have to do a few things differently. First I used a can of spanish rice, which had less rice than the box, so this cut my layers short. I only used two tortillas, to make two big layers. I sauted the onions with the ground turkey. I also added some Cayenne Pepper to the ground turkey as it browned. I used one jar of taco sauce for the topping. My DB thought it all came together pretty well. Will definately make again, the leftovers were fantastic.
