Enchilada Eggs

"An open faced Mexican omelet. This looks so nice in the pan that I set the pan on the table and serve from the pan. And yes the cheese and sauce can make serving a little tricky."

  1. This was really a great breakfast! I've never put hot sauce on my eggs, so this was a new experience for me. I'm happy to say that I had no trouble getting the omelet out of the pan, it slid right out onto a serving plate, and was just beautiful. The addition of the corn and chiles was very welcome- I rarely get vegetables with my breakfast, and this was a nice change. Made for ZWT7- Emerald City Shakers

  2. While I love spicy food, I'll admit it's not something I usually enjoy for breakfast. However, this is an exception. It is really good! I was pleasantly surprised. I didn't make mine into an omelet, however, I just scrambled my eggs. Thanks for a wonderful recipe. Made for ZWT 7 for the Vivacious Violets team.

  3. Great recipe and so easy to make! Very filling and flavorful. I used regular enchilada sauce this time but will use hot next time. Served for dinner and enjoyed a great hearty meal - thanks for sharing the recipe!

  4. Oh yes, this is delicious! I used green enchilada sauce, since that's what I had on hand, and doubled it. I also used less cheese. Served 3-4.
