- 1 1⁄2 lbs ground beef
- 30 -40 Ritz crackers, 1 1/2 stacks (crushed)
- 1 (2 1/4 ounce) can sliced olives
- 1 chopped yellow onion
- 1 tablespoon butter
- 1 lb shredded cheddar cheese
- 2 tablespoons flour
- 3 (8 ounce) cans tomato sauce
- 2 (8 ounce) cans water
- 0.333 (10 1/8 ounce) can enchilada sauce
directions
- Brown ground beef (drain fat). Crush Ritz crackers and spread crumbs on bottom of a 9x12 baking pan. Spread ground beef and sprinkle with olives. Saute onion in butter. Add flour and stir. Add sauces and water and simmer 5-10 minutes. Spread over the crackers, beef, and olives and top with cheese. Bake uncovered at 350 degrees for 30 minutes.
