- 1 lb ground beef
- 1 small onion, chopped
- 1 (15 ounce) can stewed tomatoes, Chili
- 1 cup sour cream
- 1 cup cheese, Shredded (Mexican-style)
- 8 flour tortillas
directions
- Brown ground beef and onion together, drain.
- Spray a 9X13 pan with no-stick spray.
- Mix hamburger and tomatoes and heat through.
- Stir in sour cream.
- In each tortilla wrap, place a small amount of cheese and hamburger mix to one side. Roll up and place "flap" side down in pan.
- Pour remaining hamburger on top of "enchiladas" and top with remaining cheese.
- Place in oven and bake at 350 degrees until cheese is melted.
