Ingredients Nutrition

  • 1 head Belgian endive, chopped coarsely about 1 inch wide
  • 1 head fennel, julienned
  • 1 celery heart, chopped, including the leaves (for me, that was about 5-6 celery sticks)
  • 1 green apple, julienned (I used an apple slicer first core it then just diced it)
  • 1 cup pea shoots (I found a package in Whole Foods, I couldn't find these easily!)
  • 13 cup parmesan cheese (shredded but feel free to use the Kraft in the bottle kind!)
  • DRESSING
  • 2 tablespoons lemon juice
  • 4 tablespoons extra virgin olive oil
  • salt and pepper, to taste

Directions

  1. Toss all ingredients together in a large bowl, the cheese and dressing go last.
