- 1 lemon
- 1 avocado
- 1 cucumber
- 2 spring onions
- 1⁄2 garlic clove
- 1⁄2 red pepper
- 100 g spinach
directions
- Mash the avocado into the stock until it forms a thick and smooth consistency.
- Squeeze in the juice from the lemon and throw in the rest of the ingredients.
- This soup could be served hot or cold.
