Erica's Chicken Salad

"I created this chicken salad for my sister's bridal shower. She hates mayonaise so I made some substitutions and it was a huge hit! It was liked so much that we made it and served it at my cousins wedding reception. It works best when you use bottled Hidden valley ranch dressing. It's ok, but not quite the same made with the stuff in the envelope. I love it served on crackers. It tastes best if you make it a day ahead and let the flavors blend."

  • 1 (13 ounce) can chicken
  • 2 teaspoons garlic pepper seasoning
  • 12 cup Hidden Valley® Original Ranch® Dressing

directions

  • Drain chicken, and mix in dressing and garlic pepper. You may vary the amounts of dressing and garlic pepper according to your tastes.
  • Refrigerate a few hours to let flavors blend.
  • Serve as a sandwich or on crackers.

  1. Thanks for a great idea! I saw this and had a (10 oz.) can of chicken. I thought I had Ranch dressing but I didn't! I used 1/3 cup of light Caesar. You could use any dressing you like. I added garlic-pepper but only a few sprinkles. I noticed my blend has salt so next time I'll add each separately since I don't think it needed salt. The family didn't like the taste of it that much but my kids said they don't like canned chicken. I would try this with better quality chicken and ranch dressing next time. I think the canned chicken reminded them too much of tuna and there is a saltiness with the canned chicken you don't get with fresh.
