"When our first daughter was born, a friend brought us a pail of these delicious muffins. It was such a thoughful gesture and perfect to snack on during that first couple days at home. Whenever I make these now I can still "taste" those first new days of motherhood. Thank you Erna!"

directions

  • Topping-mix all together, until mixture forms crumbs.
  • Batter- Whisk together egg, buttermilk, butter, and vanilla.
  • Stir in sugar.
  • Without mixing, add flour, baking soda, salt and apples.
  • Stir just until combined.
  • Do not over mix.
  • Spoon into muffin cups.
  • Sprinkle with the topping.
  • Bake at 375 degrees F for 20 minutes or until firm to the touch.

  2. I accidentally forgot to put the sugar in the muffin mixture, and they were a little bit floury but still delicious. Can't wait to try them again--the right way. Someone who doesn't like them so sweet could try leaving out some or all of the sugar, but omit 1/4-1/2 cup of the flour if you do.
     
  3. There were excellent! I doubled the recipe and got 36 muffins (i put 1/4 cup of batter into each tin). The 20 minute baking time was perfect for my oven. I took them to a breakfast meeting at work and everyone loved them. Thanks, Pam, for posting a great recipe. Sue
     
  4. Easy to make, easier to eat! Even though there is quite a bit of sugar in these, it is not an overly sweet muffin. Followed directions to a T, and they turned out perfect. I deliver meals to elderly housebound--they will love these delicious homemade treats. Thank you for brightening up their day.

Tweaks

  1. I wanted a more "Dutch apple topping" I made the delicious muffins in the recipe....I mixed 1/4 cup oats, 1/4 cup flour, 1/4 cup butter, 2 Tbsp brown sugar, 2 Tbsp sugar & pinch of salt to make a more crumbly topping. My neighbor said it was the best muffin she ever had a asked me to make her a dozen for her birthday breakfast tomorrow!
     
  2. I used soy milk, left out the egg completely and used a wee bit less sugar.
     
  3. I shredded the apples (used one red delicious and one golden delicious straight from the orchard), subbed about half of the butter with canola oil, and subbed one cup of flour with whole wheat flour. I thought these were good but not fantastic. I will probably sub half the butter with applesauce next time as I thought they were a little greasy.
     
  4. Love these muffins! I did cut the sugar back to 1 cup based on some other reviews, and I thought they were plenty sweet. I also used oil instead of butter, since it's all I had on hand. I forgot the topping, and they were still fantastic!
     
  5. Made them this morning and actually wasn't sure how they would turn out, considering I had hardly any butter or brown sugar! I had to substitute the 1/2 cup melted butter in the batter with 1/2 melted golden crisco, and the brown sugar in the batter was 1/2 white sugar. They were still excellent! So I can only assume they will be even better the next time with real butter and all brown sugar.
