“My mom got this recipe when we lived in Tasmania, Australia from her friend Etta Donaldson. My dad and her husband, John taught together at the University of Tasmania. Etta was a very beautiful Scottish woman, with 4 boisterous children. Her eldest Jane and I were good friends. I have very fond memories of watching Australian Rules football games, and running around in their big back yard.”

  2. Mix all ingredients. Press into 9x5 loaf pan. Bake in moderate oven for 1 1/4 hours. Serve with barbecue sauce.
