MEAT MIXTURE
- 2 1⁄2 lbs ground beef
- 1⁄2 teaspoon black pepper
- 2 eggs
- 1⁄2 medium onion, chopped
- 2 tablespoons ketchup
- 1⁄2 package lawrey meatloaf seasoning mix (see note below)
- 1⁄2 green pepper, finely chopped
- water, for coating

SAUCE (Double ingredients if desired)
- 1⁄2 cup ketchup
- 1⁄3 cup water
- 4 tablespoons brown sugar
directions
- Preheat oven to 350.
- Spray a baking dish large enough to hold the meatloaf plus a little additional space, using non-stick spray.
- Mix the meat mixture ingredients well; mold into a loaf shape in the baking dish, making sure you leave space between the loaf and the sides of the pan to permit draining of excess oil.
- With a pastry brush or your hands, moisten the top and side sof the meatloaf with cold water to prevent crumbling.
- Bake uncovered for 1 hour and 15 minutes.
- Drain off the liquid from the meatloaf, and slice in the pan, leaving the slices standing vertically.
- Mix the sauce ingredients well, then pour over the slices of meatloaf, making sure you get some between each slice, and all over the top.
- Bake for an additional 30 minutes, uncovered.
- NOTE: If you can't find Lawry's meatloaf seasoning you can use another commercial brand, or your own homemade.
- However, note that Lawry's does seem to have some flour-based filler to it also, So if what you are using does not, and it is just spices and herbs, I would suggest adding 3 or 4 tablespoons of very fine bread crumbs to the uncooked meat mixture.
