"Very Versatile Quick Bread. With one base recipe you can turn out all different kinds of bread. Including sweet breakfast breads. I have not tried this yet, I'm posting it for an ISO request."

  • Preheat oven to 325ºF.
  • Gather the ingredients for the Quick Bread Base and one of the variations.
  • Coat 4 small loaf pans with vegetable cooking spray.
  • Combine dry ingredients; blend well and set aside.
  • Combine wet ingredients; blend well.
  • Mix together wet and dry ingredients.
  • Do not over mix.
  • Distribute batter among the 4 pans, and bake for 30 to 40 minutes.

  1. Applesauce bread was easy and delicious. I used unsweetened applesauce. I also made the peanut-butter banana bread, which was fantastic!
     
  2. I used the applesauce version and it was very tasty. Might have been just a bit dry. I will probably add butter next time instead of oil and increase the amount just a tad.
     
  3. I enjoyed the taste of this bread. I added in 1/3 c strawberries, 1 banana, 1 c applesauce, 1 tsp cinnamon for my variation. It did not rise as much as I thought it would and just made 1 large loaf as opposed to 4 smaller ones. (When poured into 4 small pans it did not look to be enough for 4) so used a regular loaf pan.   4. I hate to do this since everybody else liked the recipe so much, but I followed the instructions to the letter and I ended up with a weird lump that was anything but breadlike. Try this recipe at your own risk.
     
  5. well i want to love it for some reason mine never rose and tasted horrible is that from over mixing?? i really am looking forward to trying this again but worried about if it will turn out any suggestions?

Tweaks

  1. This was a fast, tasty recipe! I made the applesauce version, substituting brown sugar for the molasses. I made one full loaf, and did not find any problems with rising. It is very dense and moist though.I baked at 350 degrees F for about an hour, and I think it could have used just a tad more time in the oven. Next time I will cut back on the sugar to 3/4 cup. Thanks for an easy and delicious recipe!
