Everyone's Favorite Chicken Salad

ingredients
- chicken breast, from 2 chickens
- 16 ounces broccoli, slaw or 16 ounces regular Coleslaw
- 1 1⁄2 cups red seedless grapes, sliced in half
- 1 cup diced granny smith apple, with peeling
- 1 1⁄2 cups diced celery
- 1 cup chopped walnuts or 1 cup pecans
- 1 (12 ounce) bottle breanna's poppy seed dressing
- creole seasoning, to taste. (optional)
directions
- Cook boneless, skinless chicken breasts and cube.
- Mix all ingredients in a large bowl.
- Chill overnight for best flavor.
- Serve with your favorite snack crackers, or stuff in tomatoes.
- Enjoy.

I made a reduced amount of this so poached two bone in chicken breasts. I liked all of the fruit, veggies, and nuts included in the recipe & the poppy seed dressing made a nice change from mayo. I wasn't sure about the creole seasoning & am not sure I would add it next time. Made for Spring '09 Pick A Chef.

I live out in the country on 14 acres. It keeps me plenty busy! I don't enjoy cooking at all. I admit that, but I do enjoy trying new recipes, and Recipe Zarr is a favorite site to explore. I try to make 2 new recipes each week. I have 3 grown children, and 8 beautiful grandchildren.
