Extra Tasty Mushroom Stroganoff

  • Soak the dried mushrooms in 1/2 cup warm water for 20 mins the drain and reserve the soaking liquid.
  • Heat the oil in a flameproof casserole dish, add the onion and garlic and cook for 3-5 mins until softened.
  • Add the mushrooms, peppers and paprika and season with salt and pepper. Cook, stirring for 5 minutes.
  • Mix the cornstarch with the stock and add to the dish with the wine, mushroom water and tomato paste. Bring to a boil.
  • Simmer gently for 10-15 mins then taste for seasoning. Serve hot with rice.
