  • Preheat oven to 350°.
  • Combine the first 5 ingredients in a large mixing bowl and mix well.
  • Stir in pecans (don't worry if dough seems crumbly).
  • Shape tablespoonfuls of dough into balls and place about 2" apart on ungreased non-stick baking sheets.
  • Bake for about 10 minutes or until golden brown and just about set.
  • Leave on sheet for a minute or two.
  • Cool completely on wire rack.

  2. Thanks Karen! These are great. I love shortbread cookies and these taste like a pecan shortbread cookie. They were easy to make. I was short on pecans, so I used 1/2 c chopped pecans and 1/2 c white chocolate chips (cleaning out the cupboard after holiday baking). They were a little too sweet with the white chips. Next time I'll make sure I have enough pecans to add the full cup and leave out the chips. I used sugar free pudding mix and it worked just fine. Very tasty, very easy, very much my style! Thanks again!
     
  3. I thought this was a great recipe. I also added 1 cup of butterscotch chips to the batter. Iused a small icecream scoop to shape the cookies and they held there shape very well. I would make this again.
     
  4. These were easy, have a nice "shortbread" texture, and a wonderful smell and taste. I used s/f pudding and regular yellow cake mix. I also used applesauce for 1/2 the fat to cut down on the fat. I increased cooking time to 13 minutes. After the first batch, which were puffy little balls, I flattened each cookie slightly. I also used pecan pieces, which were a little large but yummy. This could probably be used with other pudding mixes also like pistachio pudding with pistachio nuts. I will definitely make this one again.

  1. These were wonderful! My end result had the texture and chewiness of a Soft Batch, but with butterscotch flavor. I used s/f pudding mix (2 1.7 oz. boxes)and chopped walnuts instead of pecans. I was apprehensive about the first pan..I wasn't sure if the dough was supposed to be quite that crumbly and they looked the same when they came out as they did going in. They tasted good, though..just a little crumbly. The next pan, I added 2-3 T. milk to make the dough easier to shape and increased the cook time to 12 minutes. They spread out, and puffed a little, and had that great texture I was looking for. I got 50 cookies...my husband swears they are the best cookie he's ever eaten. Definitely a keeper! Thanks!
