Ezekiel Bread (Ezekiel 4:9)

"This bread will supply protein, calcium, phosphorus, iron, sodium, potassium, vitamins A and C, thiamine, riboflavin, and niacin. Plus it tastes good! Prep time includes time for the dough to rise. Made during Bible times, this is a Middle Eastern bread."

ingredients

  • 8 cups wheat flour
  • 4 cups barley flour
  • 2 cups lentils, cooked and mashed
  • 12 cup millet flour (grind up millet in the blender)
  • 14 cup rye flour
  • 1 12 cups water
  • 1 tablespoon salt
  • 4 -6 tablespoons olive oil
  • 2 (1/4 ounce) packets yeast or 1 tablespoon yeast, in
  • 12 cup warm water
  • 1 tablespoon honey

directions

  • Dissolve the yeast in the warm water and honey and let sit for 10 minutes.
  • Mix the wheat, barley, millet and rye flour together.
  • Blend lentils, oil and small amount of water(from the 1 1/2 cups water) in blender and place into large mixing bowl with remaining water.
  • Stir in two cups of mixed flour.
  • Add yeast mixture.
  • Stir in remaining salt(1 tbls.) and flour.
  • Place on floured bread board and knead until smooth.
  • Put in oiled bowl.
  • Let rise until double in bulk.
  • Knead again and cut dough and shape into 4 loaves.
  • Place in 4 greased pans.
  • Let rise until double in bulk.
  • Bake at 375* for 45 minutes to 1 hour.
  • Enjoy!
  • Prep time includes time letting dough rise.

  1. I ground my lentils with flour.
     
  2. I'm finding that this recipe takes forever to rise to get to "double in bulk"--how long should it take? I'm finding that my dough needs more water, is that possible? Is it my atmospheric conditions or am I doing something wrong?
     
  3. When it says two cups of lentils, is that two cups of cooked lentils or two cups or dry lentils that you will then cook?

  1. Sorry. Hate to burst your bubble but if you know anything at all about REAL Ezekiel bread, you know that it is flourless. The very first ingredient in this recipe is 8 CUPS (holy cow!) of flour. If you are looking to mimick actual ezekiel bread found in stores, you will be sorely disappointed. Although quite impressed with the taste, I'm sure, as flour makes everything better. But then again, so does butter.... Do your research people!
     
  2. Don't get me started - 'blessed thing this review doesn't include gestures and sound effects! Going into this I didn't realize it made 4 loaves! If I had I might have tried to scale it down a bit. So, drawing upon the strength of Ezekiel, I made it as directed! And the directions were quite confusing - I did a lot of winging it, further drawing strength from Ezekiel to make it work! Step 2 says, "mix the other ingredients"; what other ingredients?!!!! Mix the flours, salt, olive oil, and honey together!!! Maybe! Doubt it! @#$&* At that moment I had to silence the TV and really study and analyze how to proceed! But proceed I did after carefully studying each and every next move with this. This also didn't fit my plans to use my KitchenAid mixer - too much volume! I had to make it by hand, which fortunately was therapeutic and cathartic. If you make it by hand because you don't have a commercial appliance, triple the estimated time it takes to make! Now that I've captured my thoughts on this, I can say that I give it 5 stars because IF you can put this together, the results don't disappoint. The combination of cereal grains and legumes (lentils in this case)supplies all the essential amino acids so that you could get all your protein from this alone. I substituted spelt flour for half the barley in honor of the text, and also used stone ground whole wheat flour. (Mine required quite a lot of extra water because of the whole wheat flour.) I did, however, use the electric range and not Ezekiel's cooking fuel (Read the text to understand). Made for personal enjoyment and completely enjoyed!
     
  4. I followed the directions then realized the honey listed in the ingredients was not in the directions. Unfortunately I realized it too late. That should be corrected in the recipe. It was great warm from the oven and also toasted!
     
  5. I give this 5 stars for taste, but 3 stars for recipe directions. I make quite a bit of bread so I knew what to do, but I definitely had to read through the recipe several times. I just had a warm slice with some low-cal spread and I'm hoping it tastes this good when it's cooled down. All in all, thanks for a good recipe.
