ingredients
- 1 (1 1/3 ounce) box sugar free fat free French vanilla pudding and pie filling mix (MUST be cook and serve pudding, NOT instant, it won't work)
- 1 (1/3 ounce) box sugar-free lemon gelatin
- 2 cups water
directions
- Mix cook and serve vanilla pudding with water in a sauce pan and bring to a boil.
- Take off heat and add lemon jello. Mix well.
- Pour into bowl and let chill for 2-3 hours.

Decided to go whole hog and turned the lemon pudding into four individual crustless lemon meringue cups. The results were just delicious and I couldn't believe I was enjoying such a low point treat. (Speaking of which, according to my packages, this is four points total or 1 point per serving.) But for 1 point this was wonderfully satisfying and led me to think about other options like key lime or orange. I should mention that the pudding out of the fridge was quite stiff, but after two minutes under the broiler (for the egg whites) it became a little creamy. If you are planning to make this cold, I would suggest increasing the water a half cup. Since the earlier review asked about weights and sizes, my pudding package was 2.1 ounces and the Jello was .45 ounces. Not sure how I've missed this until now but sure glad I found it. Thanks!

I made this, but I don't know if it turned out right or not. The sizes of the boxes does not correspond to any sugar-free size I could find. The pudding was approx .89 oz and the jello was approx. .45 oz. It was interesting, but I don't know what it is supposed to taste like. Please post the sizes as they are in sugar-free pudding in jello.
