- Mix all dry ingredients in a bowl.
- Mix enough milk ( about 1 1/2 cups) and stir until smooth.
- Add eggs and stir until well mixed.
- Add vanilla and mix well.
- Add the rest of the milk, if needed.
- Let mix stand for about 5 minutes to allow a little thickening.
- Drop 1/3 cup of batter on an ungreased griddle that is set on Medium heat.
- Flip when they start to bubble (just like a pancake)
- Usually cakes take about 2-3 minutes to cook.
- **I served this with a little butter and cinnamon sugar mix. Goes great with jam as well, but they taste just as great by themselves.**.

These were so light & fluffy! The texture was like a good old fashioned restaurant pancake. I used 2 teaspoons of vanilla & the flavor still seemed to be missing a little something. Maybe cinnamon or nutmeg would be a nice addition? I did have trouble with them sticking on the ungreased griddle & I didn't want to ruin them all for the photos so I lightly oiled the griddle after the first batch. Since I was 8 years old I have been cooking & baking. I love doing both. I have been told so many times that I should go to culinary school and work as a baker or chef, but I couldn't bring myself to doing so because it's expensive and I don't want to risk losing my favorite hobby by doing it every single day. I've always found it interesting that I am able to go to a restaurant and if I like what I ordered I am able to go home and re-make the recipe with a few trial and errors.
