  1. Mix all dry ingredients in a bowl.
  2. Mix enough milk ( about 1 1/2 cups) and stir until smooth.
  3. Add eggs and stir until well mixed.
  4. Add vanilla and mix well.
  5. Add the rest of the milk, if needed.
  6. Let mix stand for about 5 minutes to allow a little thickening.
  7. Drop 1/3 cup of batter on an ungreased griddle that is set on Medium heat.
  8. Flip when they start to bubble (just like a pancake)
  9. Usually cakes take about 2-3 minutes to cook.
  10. **I served this with a little butter and cinnamon sugar mix. Goes great with jam as well, but they taste just as great by themselves.**.
