Fagiole Pasta (Not Pasta Fagiole Soup)

"This is a Southern Calebrese (Soveria-Simeri) variation of Pasta Fagiole Soup, only it's really a pasta dish with a flavorful tomato, bean, and onion sauce."

  • Sautee onion and garlic in olive oil until soft. Add beans, tomato sauce and broth. Simmer for 20-minutes, stirring frequently. Cook pasta and drain. Add beans and sauce and mix thoroughly. Serve right away.

  1. This was good and easy to make but we felt that it was missing something. I added some italian seasoning and pepper and enjoyed it more. Made for Spring PAC 2012
     
  2. I made this for dinner last night and it was wonderful. I did however add just a few more herbs and some hot pepper flakes to the sauce. It was such a simple and delicious recipe. I didn't have the ditilini, so instead I used up the medium shells that were in the pantry. Instead of fully cooking them in the water, I only half cooked them in the water. Then I added them to the tomatoe sauce to finish cooking and to thicken it just a bit. This will be one that is made again. Thank you so much! :)
     
  3. This is excellent! I followed the recipe except used elbow macaroni instead of ditali. The hearty sauce and pasta makes a great meatless meal. I will be making this again and won't change a thing. Thanks for sharing Cooputo. Made for Fall 2009 PAC.
