  • Preheat oven to 350 degrees.
  • Grease and flour a 9X13 inch pan.
  • In a large bowel mix eggs, oil, pumpkin, and sugar well.
  • Add the remaining ingredients and mix well.
  • Pour into pan.
  • Bake for 30 minutes, or until the middle springs back when touched.
  • Let cool, then ice, and add candy corn for decoration.

  2. I love the taste of pumpkin, just not in a pie, this is a must . The cake is very moist and tastes great. I used a bundt pan and topped mine with walnut pieces. Excellent holiday cake.

It is so moist, and not too sweet, which enables one to eat more than three, er, I mean, one piece. Very very good, Indiana Nurse! I could tell just by looking at the recipe that is was gonna be yummy! And I was right! Thank you for a fabulous recipe!
     
  5. Yeah! I'm the first to rate this great recipe. You're right... it was so easy to make, and it was nice & moist. I baked my cake in two 9" round pans and made it a double layer cake. And the candy corns did add a nice decorative touch.
