  1. Dissolve the yeast in the warm water in th measuring cup. Let it sit 15 minutes.
  2. Mix flour, sugar, and salt in large mixing bowl. Add yeast water and olive oil. Mix with spoon until you have to go in with hands.
  3. Form into ball and knead for about 5 minuts on lightly floured surface. Dough will feel smooth when ready.
  4. Place into a large bowl lightly oiled with olive oil, cover and store in warm place for about an hour or so. Dough should almost double in size.
  5. Make a bath for the pretzels by combining the water and baking soda and mix well.
  6. Preheat oven to 425F.
  7. Remove dough and cut into 8 pieces.
  8. roll each portion onto non-floured surface. Roll it out to 3 feet or so. Make into the shape of a pretzel by bring each end looped over each other and pinch together at the bottom of the pretzel.
  9. Grab the pinched ends and dip into bath and put onto paper towel and blot excessive water.
  10. Sit onto a baking dish lined with parchment paper. Salt with pretzel salt if needed.
  11. Bake 5 minutes in the oven then turn the pan around and bake another 5 minutes. Remove when lightly golden brown.
  12. Remove from pan and place on cooling rack. Brush with butter and serve immediately.
