Family Favorite Vegetable Soup

"This soup is chock full of veggies! It is wonderful with a loaf of crusty French Bread on a cold winter day. It is a family favorite. If I have kale in my garden I chop about a cup and throw that in. If I don't have fresh zucchini, I add in zucchini that I have dried over the summer. Sometimes I will throw in a handful of lentils."

  • Brown meat in large soup pot; drain. Add tomatoes and water. Bring to boil; reduce heat to simmer. Cover and simmer until tomatoes are soft and juicy broth is created, about 10 minutes. Add the rest of the ingredients and simmer, covered 1 hour until the vegs. are tender and flavors blend.

I fell in love with cooking when I was a girl scout and we were taken to some cooking demonstrations. We sampled the offerings and were given recipes to take along home with us. My mom was great and let me experiment in our kitchen at home making these things for the family. In high school, in study hall, I filled my notebooks with new recipes to try and have collected recipes ever since. I love to cook!!!
