Family Fun Cheesecake

- 250 g digestive biscuits
- 100 g butter
- 250 g mascarpone cheese
- 125 g natural yoghurt
- 142 ml double cream
- 2 tablespoons caster sugar
- 1 lime
- chocolate chips or grated chocolate
- tinned mandarin orange
directions
- Put the biscuits in a clean teatowel or plastic bag and bash to smitherines with a rolling pin.Melt the butter and mix biscuit crumbs in with it then line a loose bottomed 8" flan tin with the mix.
- Juice the lime
- Beat the cream,cheese,yoghurt,sugar and lime juice until thick.
- Spread this mix on the biscuit base and refridgerate.
- When set(4 hours will do it,overnight is better)decorate with fruit pieces and chocolate.Push base of tin upwards,wash up ring and enjoy.

Call it play when they peel veg if you like but I firmly believe in offering a fun and educational lifeskill(they can peel veg at 3 years of age )I love to cook with Analon pans but sometimes find them too heavy to move.Would love to hear from other one handed food lovers.
