Fanny Farmer Corn Bread

"This came from my first, and most favorite cookbook. It makes a slightly sweet cornbread, which I adore. My hubby won't eat sweet cornbread, though, so I adapt it for him by leaving the sugar out. You can also make this recipe with buttermilk, by adding a 1/2 t. of baking soda along with the other ingredients. I'm posting it here so that I can access the recipe when I am away from home and don't have my book. (I also usually grind my own flour and cornmeal, and it still makes great bread!)"

  • Preheat the oven to 425 degrees F. Grease an 8 inch square cake pan. Mix the cornmeal,flour, sugar, baking powder, and salt in a large bowl. Add the milk, egg, and shortening or bacon fat, and blend well. Spoon into the pan and bake for about 20 minutes. Cool and cut in squares.

  1. Thanks for posting. I once had this recipe committed to memory, but it has been misplaced in the vast shuffle of data now stored there. Since my paperback issue of Fannie Farmer is also misplaced, I can now satisfy my craving for really great corn bread! I like the buttermilk version as well as using bacon fat. If you're going to satisfy a craving for something wonderful, go big!
     
  2. substituted coconut sugar, coconut oil for butter and rye flour for regular flour. i used the coarse ground corn meal and used buttermilk. baked in a cast iron skillet. it came out great!!! Fanny Farmer is the first recipe that i used for corn bread and it's a classic :)
     
  3. Greatest cornbread in the history of cornbread recipes :) This is the same one my mom made growing up from her trusty Fannie Farmer cookbook. Tonight for the first time ever I made them in a waffle iron for the first time every and will serve with taco seasoned shredded chicken and taco toppings. No other cornbread recipe compares to this one!
     
  4. I have made a lot of corn bread and this is one of the best!! I drizzled a bit of honey over the top to make sure it was sweet enough, but it was not needed, plenty sweet on it's own! Going to make this again next weekend to go along with chili for guests :) SO GOOD! Kids requested it as well...that's always a plus!

I have either cooked, or wanted to cook since I can remember. I had a mother and two grandmothers that were great teachers. I especially like old fashioned recipes, esp. if I can make it with a short cut.
