Farmer's Brunch Casserole

"I have been making this recipe for about 12 years. I used to make it for brunch but now I serve it for dinner as well. It is loved by all we have served it too. It's great to serve with fresh fruits and "Recipe#126982". If using frozen, defrost first. I have used other cheeses but I find this Monterey Pepper Jack (w/ jalapenos) to work best., cheddar is too bland. NOTE & UPDATE 8/08: I grated red potatoes and the casserole turned out too wet and slimy. UGH. I would suggest purchasing the "Simply Potatoes" or using a potato that bakes up drier. Hope this makes sense."

  • Preheat oven to 350°.
  • Spray round 2" deep casserole or pie plate with nonstick spray.
  • Arrange potatoes evenly in the bottom of the casserole.
  • Sprinkle with cheese, green onions & ham.
  • Combine eggs, milk, salt and pepper over potato mixture.
  • Bake uncovered for 40-45 minutes until center is set and inserted knife comes out clean.
  • Let rest for 5 minutes before slicing.

  1. This recipe is awesome just as it is. I've started to substitute other meats and cheeses to go along with what ever is in my refrigerator.
     
  2. This dish was enjoyed by all! I made by own potato (parboiled) crust & baked for 15mins. prior to adding the other ingredients. Used a deep dish pie plate with no problem. Ingredients: proscutto ham, a milder jalapeno cheese & white pepper to hide the fact. Total cooking time 1hr. No one found this dish to be too spicy. I liked the fact it was anything other then bland. Thank you Chicago I will be serving this again.
     
  3. What a great breakfast casserole! I used co-jack cheese and the simply potatoes. At first I was worried that the onions might overpower the dish, but I was wrong. We will definately have this often.
     
  4. SUPER EASY! You could make this the night before and pop into the oven to serve during weekdays! SPICY though! DH will LOVE IT! Using the same recipe, I added Cheddar not Jalapeno Jack and that will be for DS and I tomarro! Really wonderful! THANKS Amberngriffinco
