Farmer's Casserole

"This wonderful casserole is the best 'breakfast casserole' I have ever eaten. It could easily be served at any time of day. I first ate it at a Wedding Shower and could hardly wait for the bride's mother to get the recipe for me from the Aunt who lived in another state. I am posting the recipe exactly as I received it...however I would personally increase the salt to 1 teaspoon instead of the 1/4th teaspoon since I remember adding salt when I ate it before."

  • Grease 2 quart rectangular baking dish.
  • Arrange potatoes evenly on bottom of baking dish.
  • Sprinkle with cheese, ham, onions.
  • Combine milk and eggs and seasonings.
  • Pour over potatoes and cheese.
  • Refrigerate over night.
  • Bake at 350 for 40-50 minutes until set.
  • Let rest 5 minute.

  3. What are the minimum and maximum amounts of time I can prepare this overnight recipe before baking? I had a busy morning and didn't get this in the fridge until 2pm. Will it be OK to start baking at 5:30pm today?

  1. 9/9/07 I have been making this for over 15 years and it is awesome. I always use pepper jack cheese because I found anything else to lack flavor in this dish. I have served this for brunches and family dinner. Serve with fresh fruit salad or melon slices along with Kona Inn Banana Bread and you have a wonderful brunch meal. UPDATE: 11/09 after reading these reviews I thought I would suggest using a large pie plate. It makes for a better presentation and easier serving.

  4. Just make it the way she said. Why change the ingredients? If you don't have any evaporated milk, get to the store and buy some.

  2. Good breakfast (w/leftovers for lunch). I made this in a 9x9 glass pan & sauteed green pepper, onion & sausage (instead of ham) & used American cheese & a little garlic. I didn't use the full amount of any ingredient. It is very good & the leftovers make a nice lunch the following day. Nuke x30 seconds.
     
  3. I'd give it more like 4 1/2 stars, but my husband loved it!! I substituted chopped sweet onions for the green onions. I also added garlic powder, but next time I'll use minced fresh garlic. Definitely don't use 13X9! I used an 8 1/2 by 11 rectangle dish. I also cooked it covered for 50 minutes and uncovered for 20 minutes.
