  1. Frist make up the simple raita by putting the yogurt in a small mixing bowl. Add water, 1 Tablespoon at a time, and beat the yogurt with a large spoon, until you have the desired thickness. Mix in the salt, ground cumin and minced cilantro. Set aside.
  2. Meanwhile, heat a griddle over medium heat.
  3. Take one of the flour tortillas and spread one side with some or all of the curry, depending on how much you want. Top with the second tortilla and lay it on the hot griddle.
  4. A tip here is to take any meat curries and shred the meat. If using a vegetable curry, you may need to roughly mash up the curry. Potatoes and cheese will help bind everything together. and hold the curry in place.
  5. Cook on the griddle (no oil is needed unless desired) until the tortilla is light brown. Flip over and brown the other side.
  6. Serve using the raita as a dip. Sometimes I also make up a mint raita to use for dipping.
