  • Mix all ingredients together by hand until smooth.
  • Put cupcake liners in muffin pan and spray with non-stick spray.
  • Bake at 350°F for 15 minutes, or until firm to touch.
  • Serve with Fat-Free Cool Whip if desired.

  1. wow...this is a new keeper - i used almost 2 cups of pumpkin, because i buy the larger cans, and i used the individual spices, because i don't have the mix of pumpkin pie spice, baked it in ungreased silicone muffin trays, and all but 1 slid out just fine once they had cooled down :-)
     
  2. My husband is in the Military and has to watch what he eats for his PT Tests. These were a great way for him to eat something sweet and not feel like he was being deprived. VERY delicious! I, too, had too cook these a little over 20 minutes. I mixed up a simple glaze out of skim milk, confectioners sugar and vanilla...voila, a "cupcake" my husband can eat...and ME, too! Thanks!
     
  3. I have to say, I am surprised at how good these are! I am not a baker, and these were very easy to make, and seem fool proof. I made 12 big, delicious muffins out of the mix. For some reason, I had to bake for over 20 mins, and they could have used just a bit more. Just sure the tops are no longer sticky.
     
  4. This was absolutely delicious, and good for you too. They are so moist and have such great flavor. I was able to get 24 muffins out of the mix. You never know they are fat free- and only 1 WW point with Betty Crocker angel cake mix. Also a great snack for kids. Thanks for the wonderful recipe. I'm making another batch today!
     
  5. Super easy, I did add walnuts and a few dark chocolate chips. My husband loved them, ask me to make more so he can take them to work. Did have to bake for 20 mins instead of 15. But overall win win.

It's about time that I updated my profile! It's been quite a long time. I am 31 years old, born and raised here iun Cincinnati, OH. I am engaged to be married to a wonderful man. We have 3 children- minus the bun in the oven :) I have always loved to cook. I was always an overweight child, but decided it was time for a change when I turned 19.
