  • Preheat oven to 350 degrees.
  • Drain excess water from corn.
  • Mix cream cheese, butter, corn and salsa (if used) together thouroughly.
  • Place in casserole dish.
  • Heat for 20 minutes at 350 degrees.
  • May garnish with paprika if desired.

  2. I didn't care for this corn, but my husband loved it! It was easy to prepare and probably will go great with a Mexican meal.
     
  3. We loved this dish! To help lower the fat I used neufchatel cheese. This is a keeper but next time I'm going to increase the salsa a bit. BTW, I used Pace's chunky salsa.
     
  4. My family really liked this corn. I left the salsa out because I thought they wouldn't like it but they said I should have put in it. They thought the salsa would have added a nice spicy flavor. so, I will make it again and add the salsa! Thanks Riffraff.
     
  5. Anything with this much fat just has to be some tasty stuff! Very quick and quite rich and decadent. I used a mix of yellow and white corn and made a half recipe. I actually added close to a full cup of mild salsa. I really like spice, and I think that next time I will even splash in a little hot sauce or chili powder to cut through the overall richness. Thank you bunches for this treat!
