Directions

  1. Wash, skin and cut up eggplant into cubes.
  2. Mince bacon and heat in skillet.
  3. Add onion and pepper and saute until bacon is done.
  4. Add eggplant, tomatoes, juice and celery. Simmer until tender.
  5. Put mixture in casserole dish and season with salt, pepper and a dash of oregano.
  6. Fold in mushrooms and sprinkle parmesan cheese on top.
  7. Bake at 350 degrees for 20 minutes.
