Favorite Fluffy Pancakes

ingredients
- 1 cup whole wheat flour
- 1 cup all-purpose flour (or use all whole wheat flour, especially if it is freshly ground)
- 1 tablespoon sugar
- 1 teaspoon salt
- 3 teaspoons baking powder
- 2 eggs, separated
- 1⁄4 cup vegetable oil
- 2 - 2 1⁄4 cups milk
directions
- Mix dry ingredients in a medium mixing bowl.
- Add to the dry ingredients the vegetable oil, milk and egg yolks. Mix until combined.
- In a separate bowl beat egg whites until stiff peaks form. Fold egg whites into pancake batter. Stir in blueberries or chocolate chips, if desired.
- Cook on a lightly greased griddle at 350 degrees.

I remember my mom let me bake cookies by myself for the first time when I was five. I was hooked from that time.
