Favorite Fluffy Pancakes

"These pancakes are deliciously puffy, fluffy due to whipping up the egg white separately. We like to make ours with all freshly ground all whole wheat flour. They are also wonderful with blueberries or chocolate chips stirred into them. Especially good with butter and real maple syrup."

  • Mix dry ingredients in a medium mixing bowl.
  • Add to the dry ingredients the vegetable oil, milk and egg yolks. Mix until combined.
  • In a separate bowl beat egg whites until stiff peaks form. Fold egg whites into pancake batter. Stir in blueberries or chocolate chips, if desired.
  • Cook on a lightly greased griddle at 350 degrees.

I remember my mom let me bake cookies by myself for the first time when I was five. I was hooked from that time. I love to bake and cook. Trying new recipes is especially fun for me. I usually try at least two-three per week. Of course, I have a lot of favorites that we have over and over again too. One thing that I've really gotten into recently is trying to lighten up some of my favorite recipes. Homemade pizza is one of my specialties. My husband thinks my pancakes are the best.
