Directions

  1. Mix dry ingredients in a medium mixing bowl.
  2. Add to the dry ingredients the vegetable oil, milk and egg yolks. Mix until combined.
  3. In a separate bowl beat egg whites until stiff peaks form. Fold egg whites into pancake batter. Stir in blueberries or chocolate chips, if desired.
  4. Cook on a lightly greased griddle at 350 degrees.
