  1. I've gotten good results with cakes and biscuits. The biscuits where fabulous. If you use eggs and milk in the cake you should be okay but if you avoid dairy or eggs it's hard to get gluten free pastries to work because it need the protein from both of those ingredients. I made a beautiful light springy vanilla cake but I doubled the vanilla extract to cover the lack of wheat flavor. I have had great result using the Silk protein cashew milk in place of dairy with this mix. You do need to add xanthan gum or guar gum to the recipe. This mix is great especially if you find yourself with a case of rice flour that is very coarse. Cornstarch is a lot cheaper than potato starch in my store.
     
  2. I have had good results with this mix in recipes calling for this mix, but have not had good results substituting it in a non-gluten-free recipe. There are lots of recipes online that call for this mix thought. My biggest problem with this mix is that it completely lacks nutrition. There isn't any fiber or whole grain nutrition here...
     
  3. This recipe gets a NO STAR. It was the worst mix ever. I made a cake last night that turned into a dense pile of garbage. I mean it's sweet but not edible. I woke up in the middle of the night completely upset that my sons birthday cake was ruined. Too dense. Deflates when taken out of the oven.
