Directions

  1. Heat pan.
  2. Melt 2 tablespoons of butter.
  3. Cut tortillas into strips then cut the strips in half to make them small enough to fry in the butter.
  4. Fry the tortillas ito the melted butter until golden brown.
  5. In a bowl, beat the eggs.
  6. Pour the beaten eggs over the fried tortillas in the pan.
  7. Stir the mixture of tortillas and eggs, until the eggs are cooked and the tortillas are well mixed in with the cooked eggs.
  8. Serve warm and topped with salsa and grated cheddar cheese.
