Feta-Filled Tomato Bites

"i'm always looking for a quick and easy recipe for low-key, bring-a-dish-to-share-if-you-feel-like-it type parties. this one definitely works. all of the seasonings are to taste and can easily be swapped out for other things. a few notes: if you can't find strawberry tomatoes, any other bite-sized type will work just fine. add the garlic one clove at a time and taste after each addition. you can always add more if you like. if you can't find lemon olive oil, normal olive oil and lemon juice work nicely. lastly, if you can't get fresh herbs, try looking for flavored feta. failing that, i'm sure dried would be ok too."

directions

  • slice off tops of tomatoes and set aside. you'll want them later.
  • remove the seedy, liquidy stuff from the tomatoes and discard.
  • place hollowed out tomatoes upside down on paper towels to drain a bit.
  • put feta, garlic and herbs in food processor and, um, process.
  • slowly drizzle in oil until mixture is creamy and resembles frosting.
  • turn off food processor and scoop cheese mixture into a pastry bag (or a plastic baggie, snip off a corner after it's filled).
  • squeeze cheese mixture into a tomato (fill it with as much as will fit) and replace the top.
  • repeat until either all of the tomatoes are filled or you are out of cheese. refrigerate until ready to serve.

  1. I served this appetizer at our Christmas party. It looked "festive" and tasted great! Very easy. Would be great in the heat of the summer served cold.
     
  2. With so many people coming in from out of town I made these up to serve all of my guests with my Dearest Sweet Nephews wifes help. Of course we couldn't serve them without tasting a few ourselves, mmmmm good I so love feta, add the mint, basil and oregano to taste and my Sweet Shannon states they are super. We didn't have the lemon olive oil, so used the bit of lemon juice with plain olive oil, which I don't think detered from the flavor at all. We also wanted to show that you should not limit this to just tomatoes so stuffed some cucumber slices with the filling also. I think it would even be a great filling for hard boiled egg whites and the saltiness of the feta would only enhance the egg. Thank You so much for the recipe my sweet adopted baby.
     
  3. These were terrific Chef 54...really easy, quick and a great use of cherry tomatoes I had in the garden. I loved the feta, but I could also see using goat cheese, Boursin, all kinds of creamy cheeses. I really like the bit of mint, wouldn't leave that out, and I'm not a big mint fan.
