Fettuccine Carbonara

"As I said before I love my Pol Martin cookbook. I will be posting many recipes from his Supreme Cuisine Cookbook. Some of his recipe I have already tried and some I haven't. I will always give credit where credit is due. So here is another one of his recipes. I hope you enjoy."

directions

  • heat olive oil in saute pan over medium heat.
  • add garlic and prosciutto, cook for 3 minutes over low heat.
  • add wine and continue cooking for 2 to 3 minutes.
  • remove saute pan from heat and set aside.
  • place eggs in bowl and whisk.
  • add pepper, both cheeses and mix well.
  • pour mixture over drained hot pasta mix rapidly, season again with pepper.
  • add prosciutto mixture, sprinkle with parsley.
  • mix and serve.

  1. This was a very nice light dinner dish. It is so simple to make, too. I was a bit frantic to realize at the last minute that I was out of fettuccine, so out of desperation I used spaghetti. (Sorry about that daisygrl! Next time I make this, I will be sure to have fettuccine on hand!) Made for ZWT5.
