Fettuccine With Shrimp, Tomatoes and Basil

- 1 lb fettuccine
- 1⁄2 cup olive oil
- 1 lb shrimp (uncooked)
- 4 large tomatoes
- 1⁄2 cup chopped fresh basil
- 1⁄3 cup sliced black olives
- 3 large garlic cloves
- salt and pepper, to taste
- grated parmesan cheese
directions
- Peel and devein shrimp. Coarsely chop the tomatoes. Mince the garlic.
- Cook fettuccine according to package directions. Drain and keep warm.
- Heat oil in a large skillet over medium-high heat. Add shrimp, tomatoes, basil, olives, and garlic. Season with salt and pepper.
- Cook until shrimp turn pink, stirring frequently, about 3 minutes.
- Place pasta in serving bowl. Pour sauce over pasta and toss. Top with parmesan cheese. Serve immediately.

This was super simple to make, tasted great and had a lot of veggies, which are sometimes hard to get into my three picky kids. I followed the directions for everything except I used large, precooked shrimp because deveining shrimp makes me squeemish. This meal got two thumbs up from all five members. Thank you so much loof. Made for your Football Pool win, I reduced the amt of oil & used pre-cooked Icelandic baby shrimp, but otherwise made the recipe exactly as written. It was an easy quick-fix & a big flavor success for both DH & me. He esp likes the use of black olives, so it got a 3rd thumbs-up from him in that regard. Congrats on your FP win & thx for posting this delicious recipe that is sure to be repeated.
