Fettuccine With Spinach, Red Peppers and Smoked Cheese

"this is a variation on a recipe I got from 'Simple Vegetarian Pleasures' you can combine all the ingredients into one bowl at the end but I don't like that the vegetables clump together so that one person gets spinach for supper and everyone else gets plain pasta."

directions

  • bring a large stock of water to a boil.
  • heat 1/4 cup of olive oil in a large skillet over medium heat.
  • saute garlic for 1 minute then add peppers and saute 7 minutes more.
  • pile on the spinach and cover the pan, cook about 3 minutes, until wilted.
  • add salt and ground pepper and keep warm.
  • when water comes to a boil add pasta and cook until tender.
  • reserve 1/4 cup of pasta water and drain remainder.
  • toss pasta with remainder of oil and stir in cheese to melt.
  • add reserved water as needed get cheese smooth.
  • to serve, put pasta on a plate and top with vegetable mixture.
