Fettucini Carbonara

"This is really rich, but lovely. It's been called "Bacon & Egg" pasta. I recomend you try to get the pancetta, although regular bacon can be substituted, it just won't taste the same."

  • 1.) Cut bacon into chunks.
  • 2.) Fry until crisp.
  • 3.) Drain off all but 2 tbsp bacon fat.
  • 4.) Add cream and paprika, stir until combined.
  • 5.) Place egg and egg yolk in a bowl with 1 oz of the cheesecheese whisk 'til combined.
  • 6.) Cook fettucini in boiling salted water 10-12 minutes or until done.
  • 7.) Drain, return to pot with butter until combined.
  • 8.) Add bacon crem mixture, toss til combined.
  • 9.) Add egg cheese mixture, toss 'til combined.
  • 10.) Serve and sprinkle with remaining cheese.
