Fiesta Beef

"easy, one dish meal. this is perfect for dinner after a long day. Update: I was in a hurry when originally posting this. This recipe came from the back of a soy sauce bottle. I tweaked it based on what were in the cabinets too. Thanks for all the suggestions on how to improve it- I agee that it is a base to work off of."

  • Saute the beef until brown with the onion and garlic in a large pan with the lid on.
  • Add the soy sauce, water, and tomatoes. Heat until boiling.
  • Add the rice and green beans, lower heat.
  • Simmer for 30 minutes or until rice is soft.

  1. I did not like this recipe very much at all. If I absolutely HAD to make it again I would substitute corn for the beans.
     
  2. This was easy to make and taste good. As tangible, I too added 1/2 cup more rice and water which was perfect! The only other thing I did different was to add the tomatoes the last 10 minutes of the cooking time. We will be enjoying your recipe many times to come. Thanks for posting.

The recipe didn't say what sort of beef, so I used ground beef...The recipe didn't say what sort of canned tomatoes, so I used the whole tomatoes that I had on hand and which I broke up with a spoon as they were added to the mixture...I didn't have green beans so I used frozen corn I had on hand and the recipe didn't suffer by the change...the mere ½C. of raw rice didn't seem like very much so I doubled the rice and as a consequence I doubled the water...while it may seem on the surface that I altered the recipe significantly, in reality, I just tweaked it some...it remained the same basic recipe which I have cheerfully rated as 4 star...thank you for posting this recipe, it's going into my recipe file for future re-use!
