Fiesta Dip

ingredients
- 2 cups sour cream
- 1 (16 ounce) can refried beans
- 1 (4 ounce) can chopped green chilies
- 1 (1 1/4 ounce) envelope fiesta ranch dip mix
- 2 cups shredded Mexican blend cheese, divided
- sliced ripe olives (optional)
- chopped tomato (optional)
- sliced green onion (optional)
- shredded lettuce (optional)
- tortilla chips
directions
- In a shallow dish, combine the sour cream, beans, chilies and dip mix.
- Stir in 1 cup cheese.
- Cover and microwave on high for 2 minutes.
- Stir and rotate dish.
- Cover and microwave 1 1/2 minutes longer or until heated through.
- Sprinkle with remaining cheese.
- Top with olives, tomatoes, onions and lettuce if desired.
- Serve with tortilla chips.

I fried up some hamburg, drained it of all the fat, then added it to the sour cream mix. Followed the recipe the rest of the way and it was thoroughly enjoyed by my whole gang! -
I agree with the other reviewer in that I felt this needed more beans in ratio to the sour cream, it was just a tad too creamy (not a bad thing, but I would have liked some more beans in mine). Loved all the flavours and we really enjoyed this. -
This was made for my DS, I received a call to let me know that it was thoroughly enjoyed, I also added in some fresh garlic and cayenne pepper to the sour cream mixture, thanks for sharing bmc! -
We enjoyed this dip for the Super Bowl today and thank you for sharing it. To suit our tastes next time I'll either decrease the sour cream or increase the beans because the mixture was a little creamy for us. But loved all the toppings. I made this for the Every Day is a Holiday Game.

I have two boys Eddie 18 and Brandon 10. I have been with my hubby for 16 years. I work full time outside the home and my boys keep me busy at home. Eddie is a singer and base guitar player in a band and Brandon races go karts. We also have a Collie/Beagle mix named Sugar.
I love to cook and try out new recipes. My family likes it too but at times ask my to make just "normal" food, as I forget sometimes to make my own TNT recipes.
I cook a lot with with my crock pot as it makes life a lot easier for me. I am always on the look out for new crock pot recipes.
I'm not much of a baker as I don't like to measure things.
I collect cookbooks and recipes in general. I usually start with a recipe and tweak to my families liking.

5 Stars = The whole family enjoyed the dish and it will be added to my TNT cookbook. Book #220911. These recipes will be made again and again.
4 Stars = Recipe was good, but needed some modifications or it was good but not something we would want on a regular basis. Also goes into my TNT-4 star recipe cookbook. Book #220912
3 Stars = It was edible, but won't be made again.
2 Stars = Needs some kind of major adjustments.
1 Stars = Inedible, didn't work, waste of ingredients.
