Filled Cookies Aka Flying Saucers

"This is a recipe from my great-grandmother. Simply delicious! Traditionally baked at Christmastime. I prefer dates for the fillling."

  • Cream shortening and sugar, add flour, baking powder, soda, salt, eggs, vanilla, and sour cream. Chill dough.
  • Roll to 1/8" thickness, cut 3" rounds. Add cooled filling, slightly moisten outer edge of dough before adding the top "lid". Use floured fork, using the tines to seal the edges.
  • Bake at 350 for 8-10 minutes, until set and just barely brown around the edges.
  • FILLING- Cook all ingredients for filling slowly in heavy saucepan, stirring constantly until thick, about 5 minutes. Cool.
