- 12 ounces flounder fillets
- 1 tablespoon butter
- 1 tablespoon flour
- 1 teaspoon dried onion flakes
- 1⁄2 teaspoon basil
- 1⁄2 cup chicken broth
- 1 teaspoon lemon juice
- pepper
- breadcrumbs
directions
- Arrange fish in a greased baking dish.
- Melt the butter.
- Stir in flour, onion flakes & basil. Cook until it starts to bubble.
- Add chicken broth. Cook 5-10 minutes more, stirring constantly.
- Add lemon juice + pepper.
- Pour sauce over fish. Sprinkle with bread crumbs.
- Bake at 425 for 20 minutes.

I'm not certain if I followed the instructions correctly. I've never made a Gratin before. I had a bit more fish, so thought I had increased the sauce proportionally. But I think I made the sauce too thin. I would have also appreciated knowing how much breadcrumbs to use and how to use them. I will try this one more time, following the proportions listed in the recipe and will post the results.

This is a great recipe! I've made it twice now. The first time, I used flounder--my husband really liked it, but I thought it was too fishy. The second time, I used it on mackerel that he caught on a fishing trip. The fishy taste was gone, and I loved the topping! I did add some parmasean cheese to the bread crumbs, which enhanced the flavor. I think I just don't like flounder, but I will definitely use this recipe for other types of fish!
