  1. To prepare the shrimp:
  2. Place shrimp in a bowl and mix it with salt and corn starch.
  3. Fry shrimp in hot oil.
  4. Once cooked, place the shrimp paper towels to drain.
  5. to make the sauce, mix mayo, sweet chili sauce, and hot chili sauce.
  6. pour the sauce over the cooked shrimp and mix until all the shrimp is well-coated.
  7. To make the zucchini cups:
  8. In a bowl, mix eggs, chopped scallion, parsley, dill, grated zucchini, salt, cheddar cheese, and flour.
  9. Wipe oil on mini muffin pan.
  10. Spoon in the mixture and, using a spoon, form them into the shape of a cup.
  11. Bake at 350F for 15 minutes.
  12. After the cups are baked, place shrimp into each cup and top with chives.
