Fish Rolls Primavera

"I haven't made this yet but it sounds like something that I would love, I'm just not sure about the rest of my family. Vegetables and fish sound delicious to me."

  • Preheat oven to 375.
  • In medium bowl, combine vegetables, crumbs and thyme.
  • In small bowl, combine margarine and lemon juice; add 1/4 CUP ONLY to the vegetable mixture.
  • Place equal amounts of vegetable mixture on fillets; roll up.
  • Place seam side down in shallow baking dish; pour remaining margarine mixture over fish rolls.
  • Bake 15 minutes or until fish flakes with fork.

I am a recently converted pescetarian after watching the movie 'Fast Food Nation.' That's not entirely true, I will eat meat but only if it comes from my boyfriend's cattle farm, someone shoots it during hunting season or it's a pig that's been thrown on the smoker at a pig roast. I know how it was processed so I'm not afraid to eat it. I am also a bartender at a fine dining restaurant in Duncannon, PA - Micheal's Cafe. It's the best food by far that you will get in the area.
