Fish With Curried Fruit

"A really simple fish dish inspired by my grandmother's curried fruit. My friends that I cook for keep asking for more."

  • 8 -10 ounces tilapia fillets (or similar fish)
  • 1 (4 ounce) container fruit cocktail in juice (I recommend Dole Tropical Fruit in Juice)
  • curry powder

directions

  • Preheat oven to 450°F.
  • Defrost fish if frozen.
  • Pace fish in a baking dish that doesn't leave much excess room around it, tuck thin edges under.
  • Sprinkle with a little curry powder.
  • Pour fruit cup over fish (Including juice).
  • Add more curry powder depending on your tastes over top.
  • Bake, uncovered, for 4-6 minutes per half-inch thickness. Fish is done when it flakes easily.

I was born in England and grew up in the USA. I would say I definitely turned out a blend of at least those two cultures. I'm a long-term undergrad studying psychology. I nearly switched to cooking school a couple years ago, but I honestly don't think I have the ambition to push myself forward in a commercial kitchen. I find myself quite happy making dinner several times a week for a small group of good friends (and they keep coming back for more, so I must be doing something right). I do have a slight addiction to the cookbooks at the checkout line... I've bought dozens and they're full of notes on how to improve the recipes. I also enjoy writing and an assortment of forms of artistic expression (painting, sculpting, sewing, etc). My current artistic obsession is doll collecting/customizing.
