  • Cook rice according to directions, when finished put in a casserole dish.
  • Heat 2 teaspoons canola oil in large skillet over medium-high heat.
  • Add beef and cook until browned.
  • Drain meat and transfer to casserole dish, lying over the rice.
  • Heat 2 teaspoons canola oil in same skillet.
  • Add peppers, onion and garlic and cook until peppers and onion is soft.
  • Transfer to casserole dish, lying over the meat.
  • Drizzle with soy sauce, can adjust amount if needed.
  • If necessary, you can put the casserole dish in oven on 200 to keep warm until ready to serve.
  • Salt and pepper to taste.
